How Kathryn got interested in Nutrition
In England during the mid 1990s, the newspapers were full of reports of mad cow disease or BSE (bovine spongiform encephalopathy) affecting humans. This is a condition created by eating the flesh of cattle (who are vegetarian by nature) who had been fed the flesh of other animals. The disease was originally not thought to be transmitted to humans, but sadly, has now been shown to be fatal in some cases.
This issue sparked an interest and enquiry into how food is grown, processed and distributed. What Kathryn learned convinced her to drop red meat from her diet and include as much fresh, organic and local produce as possible. Further travels through India, Thailand and Australia convinced her that wholesome foods were infinitely more nutritious and valuable to her body.
After contracting a parasite (giardia) and experiencing seasonal allergies while travelling, Kathryn became a dedicated yogini and began the long process of refining her food choices to create optimum health. Upon her return to Ontario, a dip back into unhealthy habits plus a series of office positions and family stresses resulted in weight gain, carpal tunnel syndrome, iron deficiency and Irritable Bowel Syndrome. Conventional medicine was unable to offer her solutions so she began to seek alternative therapies. Relief was found when Kathryn took concrete steps to be responsible for her own health and implement foods and lifestyle choices that promote wellness. Holistic approaches complimented her yoga practice and soon she was drawn to take a Yoga Teacher Training Program.
Soon after Reiki initiation in levels 1 and 2 was performed. Following her intuition and interest led her to sit in on a class at The Institute of Holistic Nutrition. The class was The Psychology of Disease and the topic was The Chakras (Energy Centres) of the body and how they relate to health. This was a true Eureka! moment and Kathryn signed up for the course right then and there. Kathryn's studies continued in British Columbia as Head Cook at the Salt Spring Centre of Yoga and now at Lifestyles Markets and Select Stores of Victoria.
